Wilsons just keeps going from strength to strength, doesn’t it? The Bristol-based farm-to-table restaurant—that’s almost entirely self-sufficient—snatched up a Michelin Star in February, and now it’s starring in a new eight-part documentary series on Apple TV+.
Knife Edge: Chasing Michelin Stars follows some of the world’s best chefs as they seek to win, maintain or lose the most prestigious and elusive culinary award: the Michelin Star. Filmed in cities from Los Angeles to London, Mexico City to Copenhagen, Wilsons will feature in the UK episodes of the series.
What is Wilsons?

Led by partners Jan Ostle and Mary Wilson, the restaurant embodies a pioneering approach to the neighbourhood restaurant. While Jan oversees the kitchen, Mary tends to the two-acre market garden, aka the restaurant’s main supplier of vegetables, fruits and herbs.
The prized harvest is not only used within the weekly changing menu, but preserved, pickled and dried for use during the ‘hungry gap’, while surplus is sold at the restaurant’s neighbouring bakery, The Bread Shop. Anything else not grown by the couple comes exclusively from local suppliers.

With exclusive Michelin Guide access over the course of the year-long Michelin Guide season, Knife Edge: Chasing Michelin Stars will premiere exclusively on Apple TV+ on Friday, October 10. The series is produced by Studio Gordon Ramsay Global and is hosted by food expert and co-founder and presenter of TOPJAW, Jesse Burgess.
