Bristol loves its fusion restaurants. There’s Per & Kor (Persian and Korean) on Gloucester Road, while you’ll find Rock Salt in Clifton, which marries Chinese and Indian. But Muse Brasserie looks to be an unseen experience when it comes to Bristol city centre next month.
Muse Brasserie is the joint venture of Parisian chef Franck Grillet and Chef Pramod from India. Inspired by each other’s cooking, their original restaurant in Cheltenham is highly loved by locals since opening in 2019. It is regularly considered the town’s best restaurant, offering something utterly unique and distinct you might elsewhere. This unique French-Asian fusion restaurant will bring its success to Prince Street next month.
So what can you expect? Well, Muse describes itself as “predominantly French-themed, the cuisine is an eclectic fusion of European favourites with a twist of Asian flavours.” On the menu, you’ll find traditional French dishes, such as moules et frites, byaldi ratatouille, and beef bourguignon. But, there are twists everywhere.
Elsewhere, you can order Indian tapas-style thali dishes; crispy okra with chat masala and tamarind ketchup; and tiffin made up of malai chicken tikka, cumin rice, paratha and poppadoms. To finish, try one of Muse Brasserie’s dessert cocktails such as the lemon meringue pie (with lemon vodka, hazelnut liqueur, limoncello and white chocolate and vanilla meringue). Or, the Cafe Negroni with chocolate bitters, vanilla vodka, coffee liqueur and Frangelico.
It’s not all about the food either; the setting in Cheltenham is just as lavish and surprising. Blossom trees, both growing inside the restaurant and on the wallpaper, add a vibrancy. While shelves upon shelves of wine bottles are equally eye-catching. Speaking of which, Muse Brasserie offers an extensive list of mostly old-world wines.
While details on Muse’s Bristol branch are scant, we can only hope it meets the heights of the Cheltenham restaurant. For now, we’ll just have to wait in anticipation until it finally opens its doors. To keep up-to-date head here.
